Proper Gravy

You’ll need
500ml- 750ml homemade chicken stock
1 tbsp oil + 2 tbsp butter
1 small onion, finely chopped
1 clove garlic, finely chopped
1 carrot, finely chopped
1 tsp tomato purée
5 tbsp plain flour
1 tsp dark soy sauce
1 tsp balsamic vinegar
Salt & white pepper, to taste
Optional: 1 tbsp redcurrant jelly

Method

Turn cooking mode on

Step 1

Heat oil and butter in a pan. Add onion, garlic, and carrot and fry until well browned and caramelised. This stage is key – the more colour you get here, the darker and richer your gravy will be; the carrot helps add sweetness and colour.
